Dark leafy green vegetables such as parsley, spinach, watercress and many others are rich in chlorophyll, the green pigment that most plants require for photosynthesis. It is sometimes called “the blood of the plant” in that it is chemically nearly identical to human hemoglobin. Chlorophyll stimulates red blood cell production. Additionally, dark green leafy vegetables contain many nutrients including Vitamin K and iron which is necessary for building healthy blood.
